Please tell me I’m not the only one. You take your kids out to dinner – somewhere WITHOUT a drive-thru – and what do they order? A grilled cheese. Something that you could’ve made with your eyes shut and one hand tied behind your back at home and for a lot less change that you’re shelling out for the restaurant version.

Don’t get me wrong. There’s a time and place for a grilled cheese. And besides the at home version, there’s a local gourmet grilled cheese chain called Melt that can take a typical grilled cheese and elevate it to an entirely different level. They were without a doubt the inspiration behind this recipe.
This is where I confess to thinking about food and recipes way too much. When my friends at Robert Rothschild Farm sent me their latest organic gourmet sauce, I racked my brain thinking of different ways to use it. Something seasonal. Something unexpected but easy and delicious. My train of thought went something like this…
Something seasonal that goes with citrus? My Citrus Cranberry Sauce fits that criteria. And what do you do with leftover cranberry sauce? Put it on sandwiches. What if I created a sandwich that used cranberries and used the Citrus Chardonnay sauce as a spread? Perhaps mixed with some type of mustard? Something like a dressed up grilled cheese?
Yep, that’s how my mind works.

Ingredients
- 2 tablespoons butter + additional to butter bread
- 1 cup cranberries, coarsley chopped
- 1 cup onion, thinly sliced
- 8 slices multigrain bread
- 3 tablespoons Robert Rothschild Farm Citrus Chardonnay Sauce
- 1 tablespoon Robert Rothschild Farm Anna Mae's Smoky Mustard
- 2 cups sharp cheddar cheese, shredded
Instructions
- In a large skillet, melt butter over medium heat. Add cranberries and onion and saute until tender.
- Butter one side of each piece of bread.
- In a small bowl, stir together Citrus Chardonnay Sauce and Smoky Mustard. Spread over opposite side of each piece of bread.
- Top four pieces of bread with half of cheese, 1/4 cup per slice.
- Divide cranberry onion mixture evenly and place on top of cheese.
- Top cranberry onion mixture with remaining cheese, divided evenly over the four slices. Top each with remaining bread slice, butter side up.
- Cook over medium heat until browned and cheese begins to melt. Flip sandwiches over to brown opposite side.
- Serve immediately.
Take my advice and make extra of the cranberry and onion mixture and store in your fridge for the next day for an even quicker lunch. You’ll thank me later.
