2015 seems to be officially underway now that the first week of work and school is in the books. Well, except for the day off we had on Thursday due to the extreme cold. Not that I’m complaining! Life is so much smoother in the evenings with a menu plan in place as it’s nice to already have ingredients on hand and simply make the meal that’s scheduled.
Here’s what we’ll be eating this week:
Meatless Monday: Lemon Arugula Pasta. One of the most requested recipes from our oldest and a pasta dish that comes together in just minutes. Bright citrus flavors that will put an end to the grey days of winter. At least momentarily!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Pineapple Pork Chili. The low for Tuesday is currently forecast to be -6 degrees. The perfect day for chili and cornbread! Hello, comfort food!
Wednesday: Slow Cooker Pork Roast and Cherries. My version of a recipe I made for Andy when we were first married. Totally hands off and absolutely delicious.
Thursday: Triple Cheese Chicken Fajita Cheeseburger. You can’t go wrong with a great burger in my book and this is one of my favorites. A combination of burger and my love of chicken fajitas. Did I mention triple the cheese?!
Friday: Mac and Cheese Barbecue Chicken Corn Cakes. It’s like a summer barbecue stacked in a tower on your plate. If I was from the South, this is what I’d imagine eating for comfort food.
