Hooray for a four day weekend! I had grand plans of getting a lot of things done and I suppose we are getting some things done. Just not perhaps the things I had on my agenda. You know, fun things like switching the water that was filling our master bathroom toilet from hot to cold. Because really, when you’re flipping a house, I suppose hooking hot water to a toilet seems like a good idea? So happy that my dear husband is a handy type of guy.
Me? I’ve manned taking the girls to two different birthday parties and supervised getting a new rug slid under our king sized bed. Sort of pales in comparison to the water pipe thing, right?
Here’s what we’ll be eating this week:
Meatless Monday: Potato Corn Chowder. One of our favorite soups and so easy to pull together. If you can chop vegetables, you’ve got this one covered.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Chicken with Roasted Lemons and Green Olives. An unexpected flavor combination that just works.
Wednesday: Porcupine Meatballs. A childhood favorite that I absolutely love, especially on a chilly night when served with a baked potato.
Thursday: Slow Cooker Huli Huli Chicken. No boring chicken recipe, here! This easy slow cooker meal is awesome served alongside fresh pineapple.
Friday: Taco Frito Flatbread Pizza. My knock-off of a local pizza place favorite, only in easy to eat flatbread form.
