Here’s what we’ll be eating this week:
Meatless Monday: Four Cheese and Spinach Stuffed Shells. One of my favorite meatless meals as it’s just so comforting and the perfect way to begin a week.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Easy Sloppy Joes. A family favorite and one that couldn’t be easier. The perfect filling weeknight meal that everyone is always happy to see on the menu.
Wednesday: Chicken with Roasted Lemons and Green Olives. With the weeatherman promising warmer temperatures this week, this meal will be perfect. I can’t explain why the flavors work so well together, but mand do they!
Thursday: Porcupine Meatballs. One of my most favorite comfort foods, especially when paired with a big baked potato.
Friday: Barbecue Chicken Pizza Skillet Lasagna. Pizza in a skillet! Cheesy, melty, pizza goodness – this one disapears quickly!
