Here’s what we’ll be eating this week:
Meatless Monday: The King’s Waffled Peanut Butter and Banana Sliders. The big girls have Monday off of school so we’re going with something fun for dinner to end our long weekend together. They absolutely love these!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Rosemary Citrus Shrimp Tacos. A main dish that takes just 15 minutes to prepare? A definite winner and the most popular recipe to date on Melanie Makes!
Wednesday: Chinese Chicken Spaghetti. A great main dish to add lots of extra veggies to! It’s bright and flavorful and definitely easy to put together.
Thursday: Slow Cooker Cola Barbecue Beef. My husband is always thrilled when he sees this dish on our menu plan. I love that I can prep everything the night before to make an easy dish even easier to prepare the night before.
Friday: Quick and Easy Chicken Artichoke Spinach Pasta. If you can boil water, you’ve got this dish totally mastered! Love how quick and delicious it is!
