Here’s what we’ll be eating this week:
Meatless Monday: Cherry Tomato and Tortellini Soup. Sure, the weather is pseudo-warm but until I can go outside without a coat multiple days in a row, it’s still soup weather to me! And this one couldn’t be easier to stir together and get dinner on the table.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Bacon Wrapped Cherry Merlot Pork Tenderloin. A main dish that sounds impressive but takes just minutes to prepare. I mean, how else can you pull off something like this on a weeknight?!
Wednesday: Chili Chicken Lime Burgers. A copycat of one of my favorite Trader Joe’s products. So good!
Thursday: Shrimp, Bacon and Kale Parmesan Pasta. In our house, if you add bacon to a recipe, you’re guaranteed dinner success. This recipe is no exception!
Friday: Smoky Pistachio Crusted Chicken Tenders. One of my favorite recipes I created last summer. The dipping sauce that accompanies it is equally delicious.
