Here’s what we’ll be eating this week:
Meatless Monday: Four Cheese and Spinach Stuffed Shells. One of my favorite meatless meals and a super comforting one at that with four different types of cheese. So good!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Blueberry Balsamic Chicken Meatball Pizza. A more interesting pizza than your typical pepperoni!
Wednesday: Cheeseburger Chimichangas. A spin on the typical cheeseburger that’s more kid friendly and less messy to eat!
Thursday: Mandarin Orange Chicken Salad. Studded with mandarin oranges and almonds, you’ll want to stuff croissants with this chicken salad for an easy meal.
Friday: Quick and Easy Ravioli and Spinach Lasagna. My answer to being able to make lasagna on a weeknight.
