Here’s what we’ll be eating this week:
Meatless Monday: Tomato Tortellini Frittata. You would not believe how many eggs I’m eating these days. I’m trying to make sure I’m eating a lot of protein to keep my energy levels up during the day and I love using frittatas as a way to clean my fridge before my fruit and vegetable box for the next week arrives Tuesday.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Slow Cooker Spicy Orange Beef. Pulling this one from the archives as I hadn’t made it for awhile. Slow cooker recipes are perfect for warm days when I don’t want to heat up the kitchen.
Wednesday: Pineapple Habanero Slow Cooker Pulled Pork. So in love with this pulled pork recipe. The sauce is absolutely amazing.
Thursday: Mandarin Orange Chicken Salad. A great make-ahead chicken salad that I can put together during the day and it’s ready and waiting at dinner. Love the citrus punch the orange adds to this salad.
Friday: Bacon Double Cheeseburger Pizza. I love kicking off the weekend with pizza and this one uses my Perfect Pizza Crust as it’s base. Win/win!
