Here’s what’s on our family meal plan this week:
Meatless Monday: Creamy Nacho Potato Soup. Nachos + potatoes = winning. An absolutely genius concept.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Cheesy Roasted Pepper Tacos with Potatoes. The perfect Taco Tuesday dish to put all of those summer veggies to use!
Wednesday: Sesame Chicken. Boring chicken need not apply. I love adding new chicken dishes to my recipe arsenal!
Thursday: Greek Pasta Skillet. I don’t have enough Greek recipes in my rotation. Changing that this week!
Friday: Bacon Double Cheeseburger Pizza. Meat lovers, you’ll love this pizza as it has twice the meat! It also has all the toppings of your favorite burger, including pickles!
Breakfast: Blueberries ‘n’ Cream Pancakes. A great warm weather breakfast treat. How amazing would these be to enjoy outside on the deck with the newspaper? Dreams do come true!
Dessert: Fig and Chocolate Chip Cookie Sandwiches with Vanilla Bean Buttercream. This dessert has all the flavors and you’ll want to eat each and every one of them.
