Bear with me for a second as I’m going to skip over Thanksgiving for a minute. I know, I know. I don’t have my menu completely nailed down, I don’t have a range to cook said dinner in… Perhaps that’s why I’m skipping over it? But I digress…
With holiday cookie season around the corner, I thought I’d take a stab at creating something easy. E-A-S-Y. If a cookie recipe involves multiple steps, rolling or what have you, I won’t give it a second look. Especially in the midst of holiday chaos. These Double Chocolate Ginger Crinkle Cookies are my answer to an easy – and delicious! – holiday cookie.
Sure, I’ve made crinkle cookies before. Although I’ll be honest in that I don’t remember the last time that was. Although they’re delicious, there’s rolling dough into balls and rolling in powdered sugar before you can even get them in the oven. High maintenance in my humble cookie opinion.
So instead, I’ve opted for a shortcut for these Double Chocolate Ginger Crinkle Cookies that makes them come together in just minutes.
Chocolate Crinkle Cookies with Cake Mix
Shortcut, you say? I knew that would pique your interest! These chewy, gooey Double Chocolate Ginger Crinkle Cookies start with a box of cake mix and just a few additional ingredients.
And forget the mixer! This cookie dough is simply stirred together with a mixing spoon. In no time at all, I’m ready to scoop the dough, give them a sugar shower and wait for the tasty results to emerge from the oven.

A dark chocolate cake mix is studded with miniature chocolate chips and spiced with ground ginger. The perfect holiday flavor combination – perfect for cookie exchanges!

How To Make Double Chocolate Ginger Crinkle Cookies
[1] Add all ingredients except for powdered sugar to a large mixing bowl.
[2] Stir together ingredients until just combined.
[3] Using a medium cookie scoop, drop dough into bowl of powdered sugar and roll to coat.
[4] Place on parchment lined cookie sheet and bake at 350 degrees for 10-12 minutes, or until set.
NOTE: I love to use these precut parchment sheets when I’m baking to make my time in the kitchen super easy and less messy.

Double Chocolate Ginger Crinkle Cookies
Ingredients
- 1 16.5- ounce dark chocolate cake mix
- 2 eggs
- 1/2 cup applesauce
- 1-1/4 teaspoons ground ginger
- 1 cup miniature chocolate chips
- powdered sugar
Instructions
- Preheat oven to 350 degrees.
- Stir together all ingredients except for powdered sugar in large mixing bowl.
- Using a medium sized cookie scoop, drop dough into bowl of powdered sugar and roll to coat.
- Place on parchment lined cookie sheet and bake 10-12 minutes, or until set.
- Let cool on pan 1-2 minutes before removing to wire rack to cool completely.
