These Roasted Brussel Sprouts with Apple and Bacon were one of the side dishes I made at the first Thanksgiving I cooked on my own. I would’ve never dreamed of serving Brussels sprouts on Turkey Day but page after page of magazines I flipped through contained recipes for them.
Now, years later, I wouldn’t dream of not having them on our Thanksgiving table. If I can have my meat and potato eating husband and father-in-law practically inhaling them, believe me, you’ll love them too!
Tender roasted Brussels sprouts, crispy bacon and sweet apple come together to create a simple, yet satisfying, holiday – or anytime! – side dish. It’s that classic sweet and salty combination, but this time with vegetables involved.

How to Serve Brussels Sprouts with Apple and Bacon
These Roasted Brussels Sprouts with Apple and Bacon are great served direct from the oven or at room temperature which means you can make them ahead of time to cut down on dishes vying for oven real estate and for your own meal planning sanity.
I often will make them right before I start preparing the gravy and nearing the home stretch of my Thanksgiving cooking marathon. The only downside is that because they’re already prepared and sitting on my kitchen counter, I tend to keep stealing bites leaving me with a less full bowl to bring to the table.
Then again, I’m thinking that’s only a downside for those sitting around my dinner table, not me.
What Apple to Use in Brussels Sprouts Recipe?
Another reason I love this delicious side dish? I end up using the few leftover strips of bacon and stray apple left behind in the fridge. Please tell me I’m not the only one that ends up with these!
Use any kind of apple you’d like for these Roasted Brussels Sprouts with Apple and Bacon. The Granny Smith variety are my favorite and I typically have them on hand so that’s what I’ve used in the photos. Using a red variety is a great idea for Christmas or to add a pop of color to your dish. The choice is yours!
How to Make Roasted Brussels Sprouts with Apple and Bacon
[1] Cut bacon into 1/2″ pieces and arrange in a single layer on a large, rimmed baking sheet.
TIP: I typically have bacon in my freezer at all times thanks to my Butcherbox subscription which insures that I always have my favorite cuts of meat on hand.
[2] Bake until browned, about 10 minutes.
[3] Add Brussels sprouts and add in a single layer on top of bacon. Sprinkle with salt and pepper. Roast until they begin to brown, about 15-20 minutes.
TIP: When I’m short on time, I like to purchase my Brussels sprouts already trimmed and halved so I can simply open a bag and add them to my baking sheet.
[4] Meanwhile, core and cut apple into 1/4″ pieces. Remove Brussels sprouts from oven and add apple.
TIP: No need to peel the apples for this recipe! Not only do they add a pop of color to this side dish, the peel adds a nutritional boost!
[5] Stir apples into Brussels sprouts and bacon mixture to combine.
[6] Return to oven; roast until Brussels sprouts are browned and tender and apple has softened, about 10-15 minutes.
[7] Add vinegar to Brussels sprouts and gently stir together to combine.

Ingredients
- 8 slices bacon
- 2 pounds Brussels sprouts halved and trimmed
- 2 large apples
- 4 teaspoons red wine vinegar
Instructions
- Preheat oven to 425 degrees.
- Cut bacon into 1/2" pieces and arrange in a single layer on a large, rimmed baking sheet. TIP: I typically have bacon in my freezer at all times thanks to my Butcherbox subscription which insures that I always have my favorite cuts of meat on hand.
- Bake until browned, about 10 minutes.
- Add Brussels sprouts and add in a single layer on top of bacon. Sprinkle with salt and pepper.
