I’ve shared my love of mochas before. I enjoy them hot. I enjoy them cold. I enjoy them as Salted Caramel Mocha Popsicles. They’re the perfect pick me up treat no matter what the season. And now I’ve devised a new way to enjoy them.
My favorite part of a mocha is the mountain of whipped cream on top and how it sweetens your drink as it finds its way to the bottom of your glass. Well, I’ve gone a step further. Forget whipped cream – well, don’t forget it completely! – I’m adding ice cream to my mocha!
I present to you my new mid-afternoon treat. You know, the one I can enjoy while my three children are nestled in their beds for nap/rest time and the only sounds to be heard are Truman and Duke barking and hissing at one another?

Forget brewing your own iced coffee! My secret to this sweet treat coming together in just minutes is my stash of International Delight Mocha Iced Coffee that’s kept on the top shelf of my fridge. And yes, I choose to use the Light variety as then tell myself it’s totally acceptable to add as many toppings as I want.

Ingredients
- vanilla ice cream
- International Delight Mocha Iced Coffee
- whipped cream
- chocolate syrup
- chocolate chip cookies
Instructions
- In a frosted glass, add scoops of vanilla ice cream to reach top of glass.
- Pour iced coffee into glass to cover ice cream.
- Top with whipped cream, chocolate syrup and crumbled chocolate chip cookies.
