I don’t know about your family, but mine can demolish a coffee cake in just one sitting. Well, there may be a tiny sliver left for the three big kids to fight over the next day for breakfast but with the baby so close to eating absolutely everything we’re eating, I’m finding that my days of making a single coffee cake for breakfast are numbered.
Especially when it comes to this Chocolate Chip Sour Cream Coffee Cake.
I made this coffee cake once a few months ago to test the recipe and it’s been requested nearly every weekend by someone. It’s hard to deny the request when it’s so easy to pull together, makes the house smell absolutely divine AND can be made the night before for the easiest breakfast ever before heading to church.
Because, let me tell you, getting all six of us ready for church and out the door in time should be an Olympic event.
This one bowl Chocolate Chip Sour Cream Coffee Cake takes just 10 minutes to prepare and you likely have all the ingredients in your fridge or pantry already. A light and fluffy sour cream coffee cake is studded with not one but two cups of dark chocolate chips to create the perfect breakfast or brunch dish to begin your day.

How to Make Chocolate Chip Sour Cream Coffee Cake
[1] In the bowl of an electric mixer, add butter and sugar and cream together on medium speed until light and fluffy.
TIP: Forget to sit out your butter to soften? No problem! Heat a glass of water in the microwave. Dump out water and cover your butter with the warm glass. The heat and steam from the glass will gently warm the butter so that you’re ready to bake in no time.
[2] Add vanilla, eggs and sour cream to bowl.
TIP: Out of sour cream? You can substitute plain yogurt or plain Greek yogurt with equally delicious results.
[3] Mix together on medium speed until completely combined.
[4] Add flour, baking powder, baking soda and salt.
[5] Mix on low speed until almost combined
TIP: You’ll want to mix until you still see just a bit of dry ingredients. This will prevent you from over mixing the batter after you add the chocolate chips in the next step.
[6] Add 1-1/2 cups of chocolate chips.
[7] Stir until combined, being careful not to over mix.
[8] Spoon batter into greased 9×13 pan and sprinkle evenly with remaining chocolate chips. Bake for 20-25 minutes at 350 degrees or until golden and a toothpick inserted in the center removes cleanly.
