When we moved across the country, we knew exactly two people in our new city. Well, technically four. Our friends, one of Andy’s friends from residency and his wife and their two children. They’ve been so incredibly kind to us and like our own personal chamber of commerce from day one. Whenever I’m looking for something – restaurant, doctor, landscaper, you name it – they always have an answer for me. Friends like these are like gold. We’re forever indebted to the never ending kindness they’ve showed our family.

The week after we arrived, our friends invited us over for dinner and not only was the food delicious, but it was amazing to watch our children who had never met, play like they’ve known each other forever. The highlight of the meal for me? An Indian Waldorf Salad. So fresh and delicious, I could’ve easily made it my main course. Being true to my tagline of making everyday eats a bit more interesting, I e-mailed our gracious hosts for the recipe so I could put my own spin on it.

My Spiralized Indian Waldorf Salad deviates from the original recipe in two ways. One, the original recipe calls for diced apples but I decided to pull out my spiralizer instead. This is a kitchen tool I love to have on hand as it really does make for incredibly easy, healthy dishes. Instead of peeling and coring my apples, I simply removed the stem and then spiralized them. Any seeds were easy to pick out prior to adding the apple to my serving bowl. And really, apple noodles? So much more fun to eat than diced apples. Just ask our 18 month old who kept stealing my “noonles” while I was trying to make this recipe the last time.

My second switcharoo in this recipe was subbing Greek yogurt for the mayo originally called for. Again, a healthier choice and I always have at least two tubs of it on hand as we use it like crazy at our house. And honestly? You’d never taste the difference between my version and the original recipe.

Not only is this Spiralized Indian Waldorf Salad an incredibly easy side dish, but with the addition of your favorite protein, it also would make an incredible main dish as well.
Spiralized Indian Waldorf Salad
Ingredients
- 1/4 cup plain Greek yogurt
- 3 teaspoons lime juice + zest of 1 lime
- 1/2 teaspoon curry powder
- 1/2 teaspoon ground ginger
- 2 large Granny Smith apples
- 1/2 cup chopped celery
- 1/2 cup golden raisins
- 1/4 cup minced red onion
- 1/4 cup sliced almonds
Instructions
- In a medium bowl, whisk together yogurt, lime juice, curry powder and ginger. Set aside.
- Remove stems from apple and spiralize using the largest noodle blade of your spiralizer. For easier eating, cut the longer strands of apple noodles with kitchen sheers into smaller lengths.
- Add apples, celery, raisins and onion to bowl with dressing and toss gently to coat.
- Garnish with almonds and lime zest prior to serving.
