If you follow me on Instagram, you’ll likely notice a trend when I’m at a sporting event or concert. The thread that ties them all together? NACHOS! I puffy heart adore nachos. (Have you seen my Chicken Reuben Sheet Pan Nachos?!) Sure, the processed cheese sauce is likely not the healthiest thing ever, but man is it ever delicious. Add some jalapenos and I’m one happy girl. Nachos as a substitute for dinner? My happy place without a doubt. So when we had a snow day last month, I decided nachos would be a great idea for breakfast as well and created these Huevos Rancheros Sheet Pan Nachos.
I’m not a huge breakfast eater. On weekdays, I’m slurping a smoothie on the way to dropping everyone off at school. On the weekends, I’m typically making some carb-loaded treat for everyone to enjoy. But a runny egg? I can get behind that each and every time. So what if I added said eggs to the top of nachos? With some sausage and black beans thrown in for good measure and extra protein? Clever, right? I’ve noted my love of Huevos Rancheros before in these Huevos Rancheros Waffle Fries, so clearly I think this flavor combination is on point!
How to Make Sheet Pan Nachos
And don’t forget that these are Huevos Rancheros SHEET PAN Nachos. What does that mean, you ask? It means I can assemble an entire tray of nachos that will feed our entire family with minimal effort and clean up. You’re simply layering all the ingredients on a sheet pan before putting it into the oven to melt the cheese that acts as the glue to hold everything together. While in the oven, you’re at the oven for a few minutes to prepare the sunny side up eggs that crown the top. Easy, easy, easy.
See? I told you! Layers and layers of goodness! Have small children at home? They’ll love helping to assemble these nachos. They’ll also think you’re pretty amazing for letting them have nachos for breakfast. Just sayin’.

Have picky eaters at home? (I’d be lying to admit that my middle children are the pickiest of picky eaters. Knife to this mama’s heart!) These Huevos Rancheros Sheet Pan Nachos are super easy to customize. Simply leave off ingredients that someone doesn’t like in one of the sheet pan corners. Or if the thought of a sunny side up egg isn’t your jam, (WHAT?!?), you could top with scrambled eggs as well. The choice is yours! However I must say, being heavy handed with the cheese is NOT optional.
Huevos Rancheros Sheet Pan Nachos
Ingredients
- 16 ounces mild pork sausage
- 13 ounce bag tortilla chips
- 15 ounce can black beans drained and rinsed
- 1/2 red onion thinly sliced
- 1 cup quartered cherry tomatoes
- 1 cup frozen corn thawed
- 4 cups shredded Monterey Jack cheese
- 1 tablespoon olive oil
- 4-6 eggs
- sliced jalapenos chopped chilantro, salsa and sour cream, for serving
Instructions
- Preheat oven to 400 degrees.
- In a skillet over medium heat, add sausage breaking up with a wooden spoon. Cook until completely cooked through.
- Spray a rimmed sheet pan with cooking spray and spread half of the tortilla chips into a single layer.
- Top tortilla chips with even layers of HALF each of the black beans, red onion, cherry tomatoes, corn and cheese.
- Repeat layers with remaining half of ingredients.
- Bake for 12-15 minutes or until cheese is melted.
- Meanwhile, in a large skillet, heat olive oil over medium heat. Crack half of eggs into skillet and season with salt and pepper. Cook until whites are firm but yolks still remain runny, about 3-5 minutes. Transfer to a plate and repeat with remaining eggs.
- Remove sheet pan from oven and top with eggs. Garnish with jalapenos and cilantro and serve with salsa and sour cream.
