Who knew?! Apparently I have a thing for mojitos. When I started making my own cocktails earlier this year as part of my New Year’s resolution, I quickly became a fan. And while my Grapefruit Mojitos have been in heavy rotation the last couple of months, unfortunately grapefruit season is coming to an end. To keep my mojito love alive and well, I came up with something a bit more tropical to get me through the spring and summer months. Because what could welcome warmer temperatures better than a Pineapple Mojito? (We’re going to ignore the fact that tomorrow is April 28th and there is accumulating snow in our forecast.)

Simple syrup? If you haven’t made it before, don’t worry! And please don’t be the sucker that goes to the store to buy it! It’s so incredibly easy and inexpensive to make at home. Simple syrup is simply a combination of equal amounts of sugar and water heated in a saucepan over medium heat until the sugar has dissolved completely. After it cools, you can store the liquid in the fridge so it’s at the ready whenever you’d like to use it. I love to make a large batch and keep it refrigerated in a mason jar as it’ll keep for three to four weeks. For one cup of simple syrup you’ll want to use approximately 3/4 cup of water and sugar, but again, make a larger batch so you won’t need to make it every time you’d like a cocktail.

Ingredients
- 2 limes, quartered
- 0.66 ounces fresh mint
- 1 cup pineapple juice
- 1 cup simple syrup
- 1 cup white rum
- 12 ounces club soda
- fresh pineapple cubes and additional mint, to garnish
Instructions
- Add limes and mint to pitcher. Using a muddler, extract juice from limes and bruise the mint leaves.
- Stir in pineapple juice, simple syrup, rum and club soda.
- Strain and serve over ice, garnishing with fresh pineapple and mint, if desired.
