My three big kids have been back in school for three weeks now but my baby girl starts preschool today. She turns two and a half this week but is mature enough that they’ve put her in a class with three year olds. I know that she’s more than ready – and she’s so excited about going! – but it’s also a bizarre feeling that I will be by myself for two and a half hours this morning.
Five hours a week. I haven’t had time to myself like that in nine years. What will I do with all that free time? Who am I kidding? I’ll be working, volunteering at both schools and preparing for the rest of our day. Like making a batch of this Animal Cookie Snack Mix.
Last week, instead of filling the cookie jar with, you guessed it, cookies, I instead filled it with this Animal Cookie Snack Mix. I then filled four individual sized bags with it and headed to school for afternoon pick up. My second oldest had an ice skating lesson that day so all four kids were able to enjoy a snack on the way there. It was an absolute hit as it includes everyone’s snack time favorites.

Not only great for those after school tummy rumbles, but I’m imagining it a great option for birthday parties or baby showers as well. Simply fill a large glass jar, add a scoop and let everyone serve themselves! You could do the same thing with my Rosemary Parmesan Bacon Popcorn and White Chocolate Peanut Butter Popcorn.
Animal Cookie Snack Mix
Ingredients
- 1/4 cup vegetable oil
- 3/4 cup popcorn kernels
- 3 cups animal crackers
- 3 cups frosted animal cookies
- 3 cups mini pretzels
- 3 cups miniature fruit marshmallows
- 3 cups peanuts
Instructions
- In a large pot over medium heat, add oil.
- Once oil is hot, add popcorn kernels.
- Once the first kernel has popped, place lid on pot and shake pot to distribute popcorn evenly.
- Continue to occasionally shake pot to insure all kernels will be near the heat source to pop.
- When popping is complete, pour popcorn into a large bowl.

I had forgotten just how addictive those rainbow encrusted frosted animal cookies were until I made this Animal Cookie Snack Mix. Although I used store bought animal cookies, feel free to make your own Circus Animal Cookies. They’re also the star of these Frosted Animal Cookie Muddy Buddies and Circus Animal Cookies and Sprinkles Ice Cream.
