My children reminded me today that there are just 14 days until Christmas. Just two weeks to check all my lists twice and make sure everything is ready for the big day. While I still might not be sure that each of my four children has the same number of gifts – you know they’ll count them! – I do know what we’ll be eating for Christmas breakfast morning. I can’t believe that creating something so perfect for a holiday breakfast or brunch like these Chocolate Chip Eggnog Waffles hadn’t crossed my mind before.

If my Yogurt Waffles and Chocolate Chip Yogurt Waffles got together for the holidays these Chocolate Chip Eggnog Waffles would surely be the end result. Love eggnog? You’ll definitely love these waffles. Not so much an eggnog fan? Don’t worry, you’ll love these waffles just as much. Instead of an overpowering taste, you’re tastebuds instead are greeted by the spice notes present in the holiday beverage.

SIDE NOTE: If you’re looking for an awesome waffle iron, I can’t tell you how much I love my double Belgian waffle maker. Not only is it non-stick which makes clean-up a breeze, but it also makes cooking waffles for our family of six so much quicker as I can make two at a time. I also love that it alerts you when your waffle has reached your desired doneness. No more constantly open and shutting the waffle iron to make sure your waffles are done to your liking!

It takes just a half cup of eggnog to whip up these Chocolate Chip Eggnog Waffles in the morning and get your day started off on the right foot. The perfect way to use up any remaining eggnog after making my Mini Eggnog Funnel Cakes or Chocolate Cherry Pomegranate Eggnog Cake. In other words, I’m giving you permission and the ideas necessary to eggnog all the things!

Chocolate Chip Eggnog Waffles
Ingredients
- 1 cup flour
- 3/4 cup whole wheat flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter melted
- 1 cup eggnog
- 1/2 cup whole milk yogurt
- 3 eggs
- 1-1/2 cups dark chocolate chips
Instructions
- Preheat waffle iron according to manufacturer's instructions.
- In the bowl of an electric mixer, add flours, sugar, baking powder and salt. Mix on low to combine.
- Add melted melted butter, eggnog, yogurt and eggs. Mix on low until just combined, being careful not to overmix.
- Fold in dark chocolate chips.
- If necessary, spray waffle iron with non-stick spray. Ladle approximately 1/2 cup batter onto waffle iron and close.
- Cook until waffle is golden brown, according to manufacturer's instructions.
- Garnish with powdered sugar, if desired.
Nutrition
Although I used a store bought eggnog for these Chocolate Chip Eggnog Waffles – actually it’s delivered direct to my door from a local dairy! – you could definitely make your own for a truly special treat. You could easily substitute this Homemade Classic Eggnog, Vanilla Spiced Homemade Eggnog or even this Homemade Salted Caramel Eggnog for a truly one of a kind waffle.
