When I lived at home, I nearly drove my mom and sister crazy with the off the wall things I’d eat for breakfast. Typical breakfast foods aren’t my jam every day of the week. Instead, you could find me usually warming up leftovers from the night before. I think I nearly drove them crazy with the smell of reheated chicken fajitas before seven in the morning. Had I known that Breakfast Carbonara was an actual thing, you better believe I would’ve been enjoying it way back then as well!
I mean, I ate leftover spaghetti with marinara or meat sauce for breakfast numerous times, but a Breakfast Carbonara? Downright genius! Are you familiar what carbonara is? Carbonara is an Italian pasta dish from Rome made with egg, hard cheese, pancetta and pepper. It’s basically pasta with bacon and eggs. In other words, it’s the perfect dish for breakfast!
When my friend Mary of Barefeet in the Kitchen sent me her new cookbook, The Weekday Lunches & Breakfasts Cookbook, the first page I turned to had this Breakfast Carbonara recipe front and center. The thought of pasta for breakfast? It not only brought back delicious memories from years ago but the thought had my own children thrilled with the possibility. They not only enjoyed it for brunch but they’ve also taken it in their lunchboxes to school. It’s been a winner every single time it’s been served.
I’ve dog-earred so many pages from this cookbook that it’s almost comical. I mean, “Easy and Delicious Home-Cooked Meals for Busy Families”? It’s like Mary wrote it specifically for me! I can’t wait to try her Savory French Toast Bake and Cheesy Chicken Enchilada Pasta.

The hot pasta cooks the egg and forms an amazing, delicious sauce. This Breakfast Carbonara is then showered with grated Parmesan cheese and parsley as well as crumbled strips of my Oven Roasted Bacon. I’d be lying if I didn’t admit to serving slices of bacon alongside as well. You can’t have too much of a good thing!
In fact, the next time I serve this pasta recipe, it will be with a side of my Garlic Parmesan Bread. I can’t think of a better way to begin my day. The true definition of breakfast of champions!
Breakfast Carbonara (Pasta with Bacon and Eggs)
Ingredients
- 16 ounces spaghetti
- 2 tablespoons olive oil
- 4 cloves garlic minced
- 1 cup frozen peas
- 4 eggs lightly beaten
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped fresh parsley
- 8 slices Oven Roasted Bacon
Instructions
- Prepare pasta to al dente in heavily salted water according to package directions.
- While pasta is cooking, heat olive oil to large sauté pan over medium heat.
- Add garlic and peas and cook until fragrant and peas are warmed through, approximately two minutes.
- Use tongs to transfer pasta directly from boiling water to garlic and peas mixture in sauté pan.
- If pasta looks dry, add two or three tablespoons of pasta water.
- Pour eggs over pasta and use tongs to toss continually until combined and egg mixture coats pasta.
- Remove sauté pan from heat and top with cheese and parsley.
- Serve bacon alongside or crumble over the top of pasta. Or better yet, both!
