Side dishes are never at the forefront of my mind. In fact, usually with just minutes left for my main dish to come out of the oven or finish on the stovetop, I often start to wonder what I’ll be serving alongside. I typically keep a frozen garlic bread in the freezer for instances such as these but as of late, our oldest daughter has decided that she’s not a fan. I have her to thank for the creation of this homemade Parmesan Garlic Bread. So much better than store bought and one that has been met with enthusiastic approval by anyone that’s tried it.

For the last few weeks, this Parmesan Garlic Bread has become a mainstay side at our house. It’s been served alongside my Chickpea and Pasta Soup, Lemon Arugula Pasta and Meatball Soup. At least once a week you can find wafting smells of Parmesan and garlic coming from my kitchen. And I’m definitely not mad about it. Next, I can’t wait to substitute it for the frozen bread called for as the base of my Shrimp Parmesan Sandwiches.

Parmesan Garlic Bread
Ingredients
- 1 loaf French bread
- 8 cloves garlic minced
- 4 tablespoons butter
- 1/4 cup olive oil
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat broiler.
- Slice bread in half lengthwise and place on baking sheet. Broil for 2-3 minutes or until lightly toasted.
- In a small saucepan over low heat, add garlic, butter and olive oil. Heat until melted and stir to combine.
- Brush butter mixture onto both halves of bread and sprinkle both sides evenly with Parmesan cheese and parsley.
