Now that I have an operating oven again, I’ve been baking like a crazy woman. In the past four days, I’ve made 10 dozen cookies. Yes, TEN. It’s the holiday season and that definitely means cookies, right? I’m not typically a fan of making high maintenance cookies – read that as anything rolled, needs chilled, uses cookie cutters, etc. – but I still want a cookie packed with flavor. These Blue Moon Wassail Chocolate Chunk Cookies with Orange Glaze are just that! Not only is the name of this recipe a mouthful, but the flavors that they impart upon first bite are absolutely amazing.

When I first mentioned my idea of this recipe to my husband, he gave me a look. A look that really said “how in the world did you dream that up?” Or at least, that’s what it said to me. But when he walked into the house and smelled beer simmering on the stove? He definitely changed his tune! I mean, this isn’t the first time beer has made it’s way into a Christmas cookie! I guarantee there won’t be another cookie like it around!

Wassail spice blend, you say? You know, the stuff that usually goes into mulled wine or cider? It’s also the perfect compliment to beer and oranges! Notes of cinnamon, vanilla, clove, orange, nutmeg and malted barley are highlited in this amazing Wassail Mulling Spice Blend from my friends at Rodelle. Orange and malted barley? That’s what made me think of the Blue Moon beer and it’s well known for fruit garnish.

Ingredients
- 12 ounces Blue Moon beer
- 1 cup shortening
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 2 teaspoons Rodelle Pure Vanilla Extract
- 1-2 tablespoons Rodelle Wassail Mulling Spice Blend
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups chocolate chunks
- 1 cup powdered sugar
- 1-2 tablespoons orange juice
Instructions
- In a small saucepan over medium-high heat, add Blue Moon beer and cook until reduced to 1/4 cup.
- Meanwhile, cream together shortening, brown sugar and sugar in bowl of an electric mixer.
- Add eggs and vanilla extract and beat together until fluffy. Pour in reduced beer and mix until combined.
- Add Wassail Mulling Spice Blend, flour, salt and baking soda and mix until just combined.
- Stir in chocolate chunks.
- Using a medium cookie scoop , form and drop dough onto baking sheet with silicone mat.
- Bake at 375 degrees for 10-12 minutes. Allow to cool on cookie sheet 5 minutes before transferring to wire rack to cool completely.
- In a small bowl, whisk together powdered sugar and orange juice until combined and is desired consistency. Drizzle over cooled cookies.
