To me, ice cream is a year round treat. Luckily, the rest of our family is of the same mindset! They’re big fans of this Chocolate Covered Strawberry Ice Cream Tart. I’m a big fan of not only the decadent fruit and chocolate combination, but also that it takes just minutes to prepare.
Totally inspired by the Grasshopper Ice Cream Tart that I shared a few weeks ago, this version is still heavy on the chocolate but adds a fruit element as well. The perfect dessert no matter who you are! Add in the fact that it’s also no bake and takes just 25 minutes to prepare and well, I dare you to find something wrong with this beauty.
For the record, those 25 minutes are mostly hands off time as you wait for each layer to set so that you can begin the next one. My Hot Fudge Ice Cream Pie is also prepared in the same way.
This Chocolate Covered Strawberry Ice Cream Tart is the perfect welcome to warmer temperatures. An Oreo crust is topped with my super easy Microwave Chocolate Ganache, strawberry ice cream and whipped topping before being garnished with fresh strawberries and a drizzle of chocolate.
The fresh strawberries that adorn the top turned into a bit of a creative outlet for me as I halved part of the strawberries and quartered the others to make a more interesting visual impact. I also chose to keep the leaves on the strawberries to add a pop of color.
Can You Make Chocolate Covered Strawberry Ice Cream Tart Ahead
Have friends or family coming over? I love that this dessert tart can also be prepared in advance. Simply wrap it tightly and it’ll be ready and waiting in the freezer for you when you’re ready to garnish.
The strawberries can be precut and placed in the fridge and the ganache can be rewarmed quickly.
How to Make Chocolate Covered Strawberry Ice Cream Tart
[1] In the bowl of a food processor, add Oreos.
[2] Process cookies on high speed until they are evenly sized crumbs, approximately one minute.
[3] Add butter to a small saucepan.
[4] Over low heat, melt butter.
[5] Remove blade from food processor bowl and pour in butter.
[6] Stir together Oreo crumbs and butter until combined and no liquid remains.
[7] Press Oreo crumb mixture into an even layer in the bottom and up sides of a 9″ tart pan with removable bottom.
Place in freezer for 15 minutes.
TIP: To insure that the crumb mixture is in an even layer, I like to use the bottom of a glass to gently press the mixture into the pan.
[8] Prepare Microwave Chocolate Ganache per recipe instructions. Spread 1 cup of ganache into an even layer in center and up sides of crust.
Place in freezer for 10 minutes. Meanwhile, allow ice cream to soften at room temperature while ganache sets.
[9] Spoon softened ice cream into center of tart crust over ganache and spread into an even layer. Cover tightly with plastic wrap and freeze for at least two hours or as long as overnight.
TIP: Depending how how thick your layers of crust and ganache are, you might not use all of the ice cream.
[10] Prior to serving, top tart with whipped topping.
[11] Garnish with fresh cut strawberries.
[12] Drizzle with remaining chocolate ganache.
TIP: To make your chocolate drizzle as pretty and consistent as possible, I like to spoon the remaining ganache into a ziptop bag. Snip one of the corners to act as a makeshift piping bag and pipe the ganache over the tart.

- 1 recipe Microwave Chocolate Ganache prepared
- 1.75 quarts strawberry ice cream
- 12 ounces whipped topping
- 1 pound fresh strawberries half quartered and half halved for decorative purposes
