When I have a few free minutes – yes, that’s said somewhat sarcastically as I always have a self-imposed to-do list that’s a few miles long – I head to the kitchen to create something. Last week, with the holiday and two cold days, the girls’ only had two days of school so I was able to spend my new found extra time in the week tackling a few ideas I’d been wanting to try. These Dark Chocolate Covered Potato Chip Cookies were the first on my list.

For Christmas, Andy’s mom had put a package of dark chocolate covered potato chips into our stockings. They were the perfect blend of sweet and salty and we enjoyed them while playing a board game over our holiday break. And of course, I hid a few of the packages away for a rainy day so that I could include them in a recipe. And really, what better treat to make on a cold, Winter day when you’re stuck inside than cookies!

This recipe makes three dozen cookies and I must say that they lasted less than 24 hours in our house and another batch was quickly made to replace them. Dark Chocolate Covered Potato Chip Cookies
Ingredients
- 1 cup vegetable shortening
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 2 tablespoons hot water
- 2 teaspoons vanilla
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 5 ounces dark chocolate covered potato chips approximately 2 cups
- 1 cup dark chocolate chips
- 1/2 cup chopped pecans
Instructions
- Preheat oven to 375 degrees.
- In the bowl of an electric mixer, cream together shortening, sugar and brown sugar.
- Add eggs, hot water and vanilla and beat until fluffy.
- Mix in flour, salt and baking soda until just combined.
- Stir in dark chocolate covered potato chips, chocolate chips and pecans until just combined.
- Using a medium cookie scoop, scoop dough onto parchment or silicone mat lined baking sheet.
- Bake for 10-12 minutes or until set and beginning to brown.
- Let cool for 3 minutes on baking sheet before removing to cooling rack to cool completely.
