Excuse me as I must own up to what has become a bit of a dirty little secret. It seems that during my first trimester, I tend to eat the most ridiculous junk. As in food I haven’t thought of in years and normally wouldn’t grace my pantry shelves. This pregnancy? I ate Velveeta Shells and Cheese, Pop Tarts and Cinnamon Toast Crunch. Okay, the last one is a guilty indulgence at other times as well but the first two? I haven’t had either since I was in high school and don’t recall ever purchasing them before. Major guilt after consuming them as well.

But the Cinnamon Toast Crunch? I may have just purchased a warehouse club box of it a few weeks ago. I’ve found it makes a great late night snack! It also became the inspiration for my newest cookie recipe, Double Chocolate Cinnamon Crunch Cookies. Perfect for fall as it’s warm and comforting!

When one of my absolute favorite brands, OXO, shared an opportunity to bake a difference through creating a cookie recipe using their products, I jumped at the chance. If you were to take a look inside my kitchen drawers, nearly 99% of all of my tools and gadgets are theirs. I’m beyond smitten. September is Childhood Cancer Awareness Month and by creating this recipe, OXO is donating $100 to Cookies for Kids Cancer. A perfectly sweet cause that makes such a big difference. Cookies for Kids’ Cancer is a national non-profit that raises funds for research to develop new and improved treatments for peadiatric cancer.

My all-time favorite kitchen tool, my OXO Good Grips Medium Cookie Scoop, helped make it all possible. I swear I use this scoop at least every other day. It not only make cookies a breeze but I use it to fill pasta shells, make meatballs, and so much more. If there was an ambassador for the medium cookie scoop, it would be me!

My three little ones all gave these cookies two thumbs up. The middle laughed hysterically that I put cereal in a cookie. Apparently it was comical but her cookie disappeared just as fast.

Ingredients
- 1 cup shortening
- 1 cup brown sugar
- 1 cup sugar
- 2 eggs
- 1/3 cup + 1 tablespoon tablespoon hot water
- 2 teaspoons vanilla
- 3 cups flour
- 2/3 cup cocoa
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup chocolate chips
- 1 cup cinnamon chips
- 1 cup Cinnamon Toast Crunch cereal
Instructions
- In the bowl of an electric mixer, ream together shortening, brown sugar and sugar.
- Add eggs, water and vanilla and beat until fluffy.
- Add flour, cocoa, salt and baking soda and mix until just combined.
- Stir in chocolate chips, cinnamon chips and cereal.
- Using a OXO Good Grips Medium Cookie Scoop , form and drop dough onto baking sheet with silicone mat.
- Bake at 375 degrees for 10-12 minutes. Allow to cool on cookie sheet 5 minutes before transferring to wire rack to cool completely.
Notes
Makes 3-1/2 dozen cookies.
