Last week I was in charge for Sunday School snacks for our church. We’ve been so blessed to find a new church family here in Colorado that I was more than happy to volunteer. You know, I have this thing for making food for people.
The organizing committee had recently requested that volunteers only bring cookies in an effort to simplify things and although you store bought cookies are totally acceptable, you know I wasn’t going that route. These Double Chocolate M&M Cookies were one of the varieties that I brought to share and they were a hit with young and old alike.

Love chocolate? Love candy? These Double Chocolate M&M Cookies are sure to be a new cookie jar staple. A cocoa infused chocolate chip cookie dough batter is bedazzled with dark chocolate chips and M&Ms candy, the perfect compliment to an icy cold glass of milk.
Especially when they’re warm from the oven, you can’t beat all of that melty chocolate!

This isn’t my first time stuffing some of my favorite candy into a cookie. My crispety, crunchety Butterfinger Oatmeal Chocolate Chip Cookies, super chocolatey Kit Kat Chocolate Chip Cookies and peanut buttery Reese’s Pieces Chocolate Chip Cookies are always hits in our cookie jar.
Why decide between candy or a cookie when you can enjoy both at the same time? It’s amazing how my mind words, right?

What Kind of Chocolate Should You Use to Bake Cookies?
For these Double Chocolate M&M Cookies, I used two types of chocolate to make a rich and chocolatey cookie dough. First I used my favorite baking cocoa and then I upped the flavor ante by also include chocolate extract.

What is Chocolate Extract?
Pure Chocolate Extract is a flavoring made by soaking cocoa beans in alcohol. The resulting liquid is a dark brown, liquid with a strong chocolate flavor. Think of it as similar to how vanilla extract is made by soaking a vanilla bean in alcohol. Same delicious result, but chocolate in flavor!

How to Make Double Chocolate M&M Cookies
[1] Add shortening, brown sugar and sugar to bowl of an electric mixer.
[2] Cream together on medium speed until light and fluffy.
[3] Add eggs, coffee and chocolate extract.
TIP: Not a fan of coffee? Neither am I! I promise you won’t taste it in your cookies, instead it simply deepens the flavor of the chocolate.
[4] Mix together on medium speed until completely combined.

[5] Add flour, cocoa, baking soda and salt.
[6] Mix together on medium speed until almost combined.
TIP: You want to still see flour within the dough before the next step. This insures that you won’t overwork the dough resulting in a tough cookie.
[7] Add M&Ms and chocolate chips.
[8] Stir together until just combined.

[9] Using a medium cookie scoop, form and drop dough onto baking sheet lined with parchment paper or silicone mat.
TIP: I love to use these precut parchment sheets when I’m baking to make my time in the kitchen super easy and less messy.
Bake at 375 degrees for 10-12 minutes. Allow to cool on cookie sheet two minutes before transferring to wire rack to cool completely.
TIP: Want to make your Double Chocolate M&M Cookies look like they came straight from a bakery? After your cookies come out of the oven, add additional chips and M&Ms to the top of each cookie.
