Our family’s weekly menu plan of what we’ll be eating for dinner, including the recipe and multiple photos for each dish.

After a two week spring break, it’s back to school this week. BOO! Although with the amount of bickering that has been going down in our home the past couple of days, it’s clear that we need to get back to a routine.
Here’s what we’ll be eating this week:
Meatless Monday: Best Buttermilk Pancakes. After reentry into the world of school and routines and after a three days of being the center of attention from their adoring grandparents, I’m thinking a dinner of breakfast might be a good start to our week.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Ravioli Spinach Lasagna. I’m actually getting out of carpool duty to share this recipe on Fox 8‘s morning show Tuesday morning. Looking forward to sharing one of our favorite meals!
Wednesday: Indian Butter Chicken. An easy weeknight version of one of our favorite Indian dishes. Full of flavor and ready in 30 minutes.
Thursday: Raspberry Cashew Chicken Quinoa Bowl. So many of my favorites in a single dish! Raspberries, cashews, Brussels sprouts and quinoa – this is a bowl packed full of protein!
Friday: Movie Night. I’m not sure who looks forward to movie night more, me or the girls. Either way, it’s a great way to wind down at the end of a long week.
