Here’s what we’ll be eating this week:
Meatless Monday: Sweet and Smoky Quesadilla Casserole. Love this casserole served with a salad. I also love when there’s a slice leftover that I get to enjoy the next day for lunch!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Jalapeno Popper Mac and Cheese Brats. The mac and cheese by itself is amazing but put it onto a brought and it’s out of this world!
Wednesday: Quick and Easy Chicken Artichoke Spinach Pasta. And by quick and easy, I mean 20 minutes or less!
Thursday: Weeknight Chicken Paprikash. I wouldn’t dream of tackling traditional chicken paprikash on a weeknight but this one is a hit and so easy to get on the table quickly.
Friday: Shrimp Bacon and Kale Parmesan Pasta. Even the two little ones that give me grief over leafy greens in any recipe love this one. I’m guessing it’s all about the shrimp – one of their new found favorites!
