Here’s what we’ll be eating this week:
Meatless Monday: Four Cheese and Spinach Stuffed Shells. What better way to start your week than with a plate of cheesy goodness?
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Slow Cooker Cola Barbecue Beef. A family favorite that I’ve been making for years. This one was a popular post this past week and a great reminder for me to add it to our menu, stat!
Wednesday: Barbecue Chicken Pizza Skillet Lasagna. It’s pizza AND lasagna in one skillet. How can you go wrong?
Thursday: Shrimp, Bacon and Kale Parmesan Pasta. The bacon in this dish is truly magical as it pulls everything together effortlessly.
Friday: Slow Cooker Blackberry Chicken.
