a week off of menu planning and just working with what i had on hand means a less than $40 grocery trip last week. i'll still consider that a success!
after filing a bunch of recipes i've pulled recently from magazines, i'm excited to jump back into things this week. looks to be a great week weather-wise so i'm trying to go for easy recipes that will allow us to get out and play without much dinner prep needed.
meatless monday : peas + cheese tortellini. haven't made this in awhile and the girls will think it's heavenly. i'm delivering dinner to two different families today so i need something quick and yummy for us!
i've selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i'm nice like that.
tuesday : peperoncini beef sandwiches. andy's request for the week. and a big hello to my crockpot which i haven't used enough of lately. these haven't been on the menu recently as they weren't exactly died friendly but man are they tasty! and super easy.
wednesday : breakfast casserole. i've been thinking about this dish for the past week and need to make it already! we always have this dish when i'm visiting home and when i was younger on christmas morning. it'll seem like a special occasion! yes, it's technically a breakfast dish but it takes an hour and a half to cook. i'm not that patient in the morning nor are my children. so i plan on making it in the am and then putting it in the oven after naps. paired with some fruit, i'm going to call it good!
thursday : sausage, peppers, onions and garlicky tomatoes. unable to find a working link for this one that i pulled from an issue of woman's day earlier this year. this should definitely be a winner in andy's book.
friday : pizza.
