the first menu of october. and what looks to be a beautiful first week of the month as well with highs in the low 70s. the past two days have been in the low 50s – i can tell our wisconsin winter is near!
meatless monday – orzo salad with black beans, mushrooms + corn. C and i love this. i’m already craving avacado just thinking about it! a quick meal to put together during naptime for later in the evening.
tuesday – pulled pork sandwiches. after L was born, my friend betsy brought us pulled pork for sandwiches and used bbq sauce that she had gotten at trader joe’s. it was so good! so while at trader joe’s a couple of weeks ago, i spied the sauce and it instantly went in the cart. or rather under it as L was in her infant seat in the cart. i’ve been looking forward to making this ever since.
wednesday – thai chile peanut meatballs. guess who requested this one? we haven’t had these in about a month which i’m guessing is a record in our house.
thursday – swiss chicken casserole. we haven’t had this in awhile and i have all the ingredients on hand so on the list it goes. pretty much the only reason i buy boxed stuffing mix or eat swiss cheese.
friday – pizza.
