coming down from a sugar high from halloween. or really more from a fun high. so much more fun to trick-or-treat with your child than actually trick-or-treating with yourself. i think fall is here to stay so it’s all about soup and comfort foods until further notice. yum!
meatless monday : potato soup. now technically i know there will be bacon involved in some way. i am married to my husband after all… it’s 90% meatless however so we’re going to go with it. plus i’m sick of said husband giving me flack for doing meatless meals.
tuesday : black beans + sausage. a new recipe from november’s everyday food. andy will love the sausage and C will love the beans. perfect.
wednesday : leftover buffet.
thursday : slow cooker green chile pork tacos. my girl gabby shared this recipe with me last week and i’m never one to doubt her recommendations!
friday : pizza. pizza always signals the start of the weekend. hooray for pizza!
saturday : chicken dumpling soup. one of our favorite soups. probably the most favorite actually. looking forward to making it for the first time this season.

penne with bacon, butternut squash + spinach. super tasty! andy even found it surprisingly tasty. loved this. loved the leftovers. totally making it again. C said she didn’t like the squash, but she ate the requisite pieces to leave the table. i’m sure she’d do it again.
sausage, potato + cheese waffles. ehh. they were fine and i have leftovers in the freezer but for the extra effort in preparing the ingredients that went in them, i think we all agreed that we’d rather have the more typical waffle. actually, sour cream waffles are my waffle of choice.
