from the looks of this menu, i’m all gung ho and energetic this week. every recipe is new, new, NEW! i was cleaning things out again and went through a stack of recipes that i had earmarked to try at some time. well, now is that time. we’ll see if i survive the chaos of it all.
monday : moussaka. not only is it fun to say and spell, the photo of the finished dish looks amazing. granted, i don’t think andy looked too closely at the ingredient list when he agreed that i did look quite tasty as there are a few things that he would’ve found suspect. but instead, we’re making it and see what he thinks afterwards. a nice approach, eh? think of it as a greek type of lasagna…
tuesday : vegetarian chili. yet another the husband agreed to. maybe because i’m also going to give chili cheese corn muffins a whirl that night as well? this one will be on the recipejournal by the end of the week for meatless supper club.
wednesday : goat cheese and roasted corn quesadillas. the goat cheese will be cooked which means this pregnant mama can eat it! mmmm.
thursday : spiced chicken stew with carrots. one for the slow cooker. and not from my usual go to crockpot lady. i figured i’d give her the week off.
new recipe reviews from last week :
orange chicken. andy thought it was a bit too orange-y. i was fine with it because i added a lot of red pepper flakes to it. the girl seemed to enjoy it without complaint.
beef bourguignon. the girl and i were fine with it – of course andy was over the moon about it. it was super easy to make, but it’s a heavier dish. i never went back for seconds. dissapointing as a i really wanted to love it.
