putting this up a little later than normal. life seems to have been consumed with potty training and trying to get the girls adjusted to daylight savings time. good times, friends. good times.
monday : slow cooker green chile pork tacos. these were originally scheduled for last thursday but we instead had mcdonald’s to celebrate potty useage. i actually made the pork yesterday and then froze half and kept the other half in the crock pot. i warmed it back up this afternoon and it made for a super easy dinner. the meat was so tender. and so tasty! the one thing i didn’t like was that the tortillas continually fell apart. not cool when i’m feeding a baby with one hand and trying to eat my dinner with the other. i think using the meat in a quesadilla or putting it in a hard taco shell would be better. otherwise, everyone enjoyed this one. and i loved preparing it in advance! unless you have a big family, i’d totally just make half of this if you aren’t planning on freezing part. this makes a LOT of pork. and kudos to me as pork was on sale last week!
tuesday : citrus turkey roast. [new recipe] a grocery special this past week netted me a free turkey breast roast. after some googling, i found this recipe. we’ll give it a whirl!
wednesday : italian pasta + bean soup. [new recipe] when metropolitan home folded, they moved my subscription to woman’s day. while i wasn’t originally thrilled with the choice, they have had a few recipes that have caught my eye. this would be one of them.
thursday : emeril’s three-cheese macaroni. heavenly goodness. we had this a week or so ago and it was SO GOOD. i’ve been craving it again ever since. i got the recipe from an issue of everyday food, but this link has the same recipe as well.
friday : pizza.
last week new recipe review
black beans + sausage. a new recipe from november’s everyday food. this was good. C was excited to see all of the black beans as she loves them. between the three of us, there was no leftovers. would definitely make again.
