the theme for the week is using what i have in the freezer, pantry, fridge, etc. i’ve gone over my grocery budget the past couple of weeks so it’s time to get back on track. ironically, andy says this is the best menu ever. go figure.
speaking of this week’s menu, here’s another way that i’m using the dry erase crayons i mentioned before :
the framed pear is actually part of a large canvas i purchased from cb2 a few years ago. i never really was happy with it so after we hung up C’s gallery of artwork where it used to hang, i took the scissors to it and cut it down to fit this frame and hung it in the kitchen. it was fine but now with the crayons, it’s actually functional as i write the week’s menu on it and then simply wipe it off and start over the next week. and now andy actually knows what we’ll be eating in advance as he doesn’t read my blog. a win/win. and yes, the two of us do eat popcorn for dinner each sunday after the girls are in bed.
on to this week’s menu…
meatless monday : potato soup. one of andy’s favorites. and although it technically has bacon in it as well, he thought it was a good compromise as i prepared two meatless meals last week. compromise, my friends. the funny part about this meal? C doesn’t care for potato soup. instead she wanted to gorge herself on broccoli and cauliflower that i was giving to L. and L wanted none of her veggies and instead gorged herself on potatoes from the soup. crazy girls.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : chili. another meal that C will likely not be thrilled with. although i think i’ll win her over with cornbread. cornbread makes any meal better.
wednesday : leftovers.
thursday : mandarin orange chicken. both girls have become completely obsessed with mandarin oranges as of late so i’m thinking they’ll be smitten with this. i haven’t made it in ages so it’ll be nice to have it back on the menu.
friday : pizza. hello weekend!
saturday [lunch] : tacos. a super easy lunch to put together and we all love them. especially C who tends to eat the filling out of her taco and then request additional tomatoes.
saturday [dinner] : turkey pot pie. nothing says comfort food like pot pie. and the temp on saturday is supposed to be obnoxiously cold. the perfect combo.
