my first menu plan of the new year. i've taken the past couple of weeks off with the holidays and such and it really does start to take a toll after a while. ready to get a grocery list made and have some yummy meals this week! that is, after i get all of the holiday decor piled up on the dining room table put away…
meatless monday : sweet potato + black bean burritos. we haven't had these in awhile so back into the rotation they go! looking forward to something different.
i've selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i'm nice like that.
tuesday : peperoncini beef sandwiches. a request from andy for the week. with school, dance and swimming lessons all starting again this week, the crockpot will definitely become my ally in getting dinner on the table easily!
wednesday : pumpkin pie french toast. had thought about this for last week and then did something else instead. we haven't done breakfast for dinner in awhile and this sounds super yummy.
thursday : pasta fagoli soup. a recipe i'd forgotten about but that we all enjoy. super easy and hearty as well. we're supposed to get a bit of snow this week – FINALLY! – so soup seems like the perfect choice.
friday : not your mother's meatballs. a new recipe for us. all of us enjoy meatballs so i have high hopes for it! thinking about serving it with rice so that i can use the rice cooker as well and at dinner time i really won't have to put forth any effort but to eat.
