a day late this week in posting, even though the menu was planned on sunday. oops! too many other things going on yesterday that kept me from my computer. this week’s grocery shopping adventure was atypical as i went to the grocery store and then after spending $45, planned my menu around what i had purchased and what i had on hand.

here’s what we’re dining on this week :
monday : pancakes. from one of my favorite cookbooks. absolutely adore everything in it that i’ve ever tried. C requested pancakes for breakfast and lunch and i told her we could have them for dinner. a perfect meatless meal. should i mention that L had three regular size pancakes in additon to other foods for dinner? that girl loves meal time.
i can also say that this cookbook from heidi is also amazing. totally made me rethink what type of flours, sugars, etc. i use. and why i love bulk bin shopping so much.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : homemade sloppy joes. my grandmother’s recipe that is just out of this world. when my sister told me that she used the stuff out of the can (hi, nan!) i tried to hide my disgust. granted she’s about to give birth any day to our nephew so i’ll gladly give her a free pass on pretty much anything in the world these days.
wednesday : leftovers/baked potato bar. this has become our go to meal for mid-week. it helps clean out the fridge which always makes me happy. i’m still amazed that my husband lets a baked potato count as a meal. although his request is that there is chili to put on top. i’m happy to oblige.
thursday : chorizo potato frittata. [new recipe] this recipe was in my “to try” binder across from one of last week’s recipe and when i saw chorizo at the store, i had to grab some. let’s hope it’s as good as it looks.
friday : pizza. the perfect start to our weekend. and perfect start to andy being off the next week. he hasn’t had a week off since september so to say we’re excited is a mild understatement!
saturday | lunch : lentil + rice burritos. these were actually going to be dinner monday night until they were bumped. nevertheless, i love these. super simple to make and there’s always leftovers for another meal.
saturday | dinner : pot roast glazed with red wine and cranberries. [new recipe] it sounds like a perfect saturday night dinner, right? now that i’m drinking wine again – hello, old friend! – i’m looking forward to enjoying what’s not used in the recipe.
new recipe reviews from last week
mediterranean chickpea burger [everyday food | march 2011]. these were okay. i’d make them again but they weren’t anything i was just over the moon about. L loved them and ate over half of one. andy was fine with them surprisingly although again, he wasn’t raving. i made them completely meatless. if i were doing it again, i’d likely try them with using the beef called for in the recipe to help hold everything together.
slow cooker spiced chicken stew with carrots. another okay recipe. easy to throw together. the hardest part was peeling two pounds of carrots. nothing sensational, but an easy meal to put together with to little ones around. speaking of, both of the girls ate this without any problems except for the usual mess they make when there is couscous around. i need to only serve them israeli couscous to help make clean up for this mama easier!
