my plan this week was to incorporate recipes from the many cookbooks i currently have checked out of the library. did that happen? not exactly. instead i sorted through the many recipes that i have filed away in my google reader. hopefully that will be the plan for next week. too many recipes, not enough time.
monday : spinach and cheese strata. meatless mondays are back. andy asked for how long and i said until the end of time. we'll see how that goes. two reasons for meatless mondays… [1] it's less expensive to eat a meal without meat and [2] it's more environmentally friendly. this recipe is from this month's issue of "everyday food." i think this is the third recipe i'll have made from this issue. i hope this will be as good as the frittata i made a couple of weeks ago. to appease my meat and potatoes guy, i'll be sure to make him something yummy for dessert.
tuesday : beef and noodles. it's supposed to be a rainy and nasty day so this should hit the spot. and i already have everything needed to make it. with spring here, heavy dishes like this will be few and far between so i'm sneaking it in while i can.
wednesday : slow cooker cheese enchilada stack. the only crockpot recipe of the week. shocking, i know.
thursday : chicken pomodoro. straight from my google reader files. i hadn't remember filing this away but i can't imagine it not being a hit with everyone. i'll likely make the chicken for andy but doubt C and i will eat it with meat.
friday : pizza.
saturday : meat lovers lasagna. if my husband didn't adore me before, this dish should have him at hello.
last week's new recipe reviews
maple dijon chicken - one of only two recipes i've ever tried from this site that i haven't been happy with. there wasn't anything truly wrong with it. it was just blah. no flavor.
coconut beef – i had high hopes for this one. and although i enjoyed it, it tasted more like a curry than anything with coconut in it. i only used a tablespoon of the red chili paste an am glad as even the amount i used was totally overpowering. definitely spicy. will try again, but will revamp the quantity of the ingredients used.
