yes, i know. it’s really tuesday…
andy’s parents were visiting us this weekend and we were lucky to have them stay an extra day. that really should read, they are so incredibly awesome as they watched the girls while i had lunch with a friend and a massage. seriously, i don’t think i’ve done something like that ever. and i only felt a tiny bit guilty.
this week’s menu is all about simple. since i feel like i’m playing catch up today, simple is the name of the game and tonight’s dinner came about with what i already had on hand before heading out to get groceries.
monday : turkey burgers. a favorite of all of us, except for C who ate the requisite peanut butter and jelly that you get in this house if you don’t care for the meal that is being served. not really a big deal as she loves peanut butter and jelly. with strawberry jelly. andy’s dad was manning the grill as andy was late getting home. so nice to have two extra pair of hands around! note : papi doesn’t have two pairs of hands, but rather nana was playing with leighton while i was doing dinner stuff in the kitchen.
tuesday : salsa chicken nachos. instead of serving on rice, i shreded the chicken and served it on tortilla chips topped with cheddar cheese, additional salsa and plain yogurt. yum! couldn’t have been easier and i almost always have the ingredients on hand. will definitely be making this again.
wednesday : skillet stuffed peppers. i have a couple of peppers leftover from last week in the crisper that need to be used. a perfect meal for andy and i. the girls will likely eat leftovers. usually one night a week, we eat together after the girls are in bed. nice to actually have a 1-on-1 conversation while we eat. a dinner-in date night of sorts.
thursday : coconut beef. a new one to try this week as i was flipping through my make it fast, cook it slow cookbook. stephanie rarely steers me wrong, so we’ll give it a go!
friday : pizza.
