when i was little, whenever we wanted to draw or color at my grandmother's house, she always handed us a piece of paper from a large wall-hung file bulging with junk mail. we were to use the back sides of these pieces of paper. as a child, i'd be lying if i didn't say i was a bit miffed to use the back side of piece of already used paper for my artwork. and then there's adult me who finds that i'm using the back sides of random papers for things such as my grocery list. this week's menu and grocery list are on the back side of a geranium order form for church. random sidenote? very much so.
meatless monday : spinach paninis. my husband was looking through our sonoma diet cookbook and saw this and noted that it looked good. even after i clarified that there was absolutely no meat whatsoever in between those two slices of bread in the photo he was looking at. so obviously i'm jumping at the chance to make this. especially since i have an abundance of spinach in my fridge at the moment and i can only put so much of it into smoothies for the girls. which by the way, C thinks is totally normal because i didn't make a big deal out of it whatsoever (and you can't really taste it). she enjoys putting a large handful in and pushing the buttons on the blender.
i've selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i'm nice like that.
tuesday : wraps. a busy day = a quick dinner. and a yummy and filling one at that.
wednesday : grilled five spice flank steak. i love using five spice and we haven't had flank steak in way too long. a perfect marriage of the two!
thursday : cilantro chicken with peanuts. we had this last week and we all thought it was amazing. i'm going to have to double it though as the girls both ate way more than i thought they would and leftovers would be awesome on a salad or wrap for lunch. super easy and full of flavor.
friday : pizza. last week, i totally skimped on the amount of pepperoni i usually use and loaded our pizza with peppers, onions and cherry tomatoes. imagine my surprise when andy said it was delicious! the girls both enjoyed it as well. C thinks tomatoes are the best food around. she's one of the reasons why we're growing them again on our deck this year and why we go through two pints of them a week at our house.

cilantro chicken with peanuts. we're making it again this week – enough said!
braised pork tenderloin with olives and capers. really good! the girls were so-so about it, but then again, they aren't huge meat eaters. andy and i both enjoyed it. i'm not overly fond of pork but this didn't take too pork-ish for me. we had enough leftovers to use on wraps one night and then for andy one day for lunch. i substituted yellow squash for the eggplant as it's not really eggplant season at the moment. will definitely make again.
