back to the menu planning after a few weeks off. one week was spent at my mom's in which i gained five pounds. last week i put both andy and i on a diet – really i was going to do it and he decided to join me – so i was getting a handle on that, being back home, etc. and menu planning fell by the way side.
here's what we're eating this week :
monday : stirfry. this should read more like "attempting to use all the random bits from last week's csa before they go bad because i don't have other plans for them." mainly some baby bok choy and some loveage. what's loveage you ask? think herb that tastes like celery. both were perfect in my made it up as i was going along stirfry.
tuesday : cilantro chicken with peanuts. a new recipe. although looking at it again, it appears i forgot to pick up cabbage today while grocery shopping. oops. might need to make a quick run to the store in the 96+ degree heat tomorrow.
wednesday : chicken wraps. this has replaced our baked potato night as a quick meal that helps utilize random veggies left in the fridge before we pick up our csa box the next day. fast, filling and easy.
thursday : braised pork tenderloin with olives and capers. another new recipe. there are no eggplants to be found so i'm substituting yellow squash. but oh, how i do love eggplant!
friday : pizza. only this week there will be more veggies included.
