yes, it’s menu plan monday on tuesday. i’m going to start a hip new trend. so many things going on lately. this week’s menu reflects that. easy stuff. and stuff that doesn’t make it too hot in the house. i actually had to turn the air on on saturday. boo. this is only the second time i’ve had it on all summer though, so i won’t complain i guess.
first, a review of dishes from two weeks ago :
actually, there was only one new dish that i tested that week, but it’s well worth the review. Orange-Apricot Pork Chops in the CrockPot. really good. super moist, not overdone at all. and really easy. i got everything together the night before and simply dumped it in the next day. and everyone enjoyed it. a win/win all the way around.
and now for this week’s menu :
tuesday : easily stuffed manicotti – i haven’t made this in forever but have wanted to after dining on some lean cuisine manicotti for lunch last week. i think the girl will approve as it has her two favorite food groups – pasta + cheese.
wednesday : tacos – i didn’t get these made two weeks ago and am looking forward to the sour cream. although the tacos are nice too.
thursday : tater tot casserole – i don’t think i’ve ever made this, but when talking to my mom last week about the girl’s new love of tater tots she suggested it. i remember her making it for my sister and i when we were younger. andy loves tater tots as well. me? hmmm, not so much. but we’ll give it a whirl.
friday : leftovers.
i don’t typically plan things for the weekends as it’s usually up in the air as to what we’re up to. and now to make a grocery list.
