such gorgeous weather to start this week. it’s so much cooler than the recent past that it already has me thinking of fall. and soups. and stews. andy requested chili last week and i told him he had lost his mind. soon though. soon.
monday : sundried tomato + caper pasta. this was on last week’s menu. and i did make it then. instead of eating it due to a menu change i put it in the freezer. so it’s a super easy meal to pull together tonight and perfect for meatless monday. i’ve got some squash and eggplant i hope to roast and some garlic bread on my mind as well.
tuesday : hawaiian ribs. andy has been raving about a short rib dish he had at a dinner on friday night all weekend. i think he might just stay married to me for another eight years (today’s our anniversary) if i suprise him with these.
wednesday : tacos. it seems that andy requests this all the time. we had them two weeks ago but everyone enjoys them so they’re back on this week’s menu. it’s nice that a lot of the taco toppings come from our csa box so it’s a great way to use them as well.
thursday : asian barbequed turkey lettuce wraps. i saw jamie mention these on twitter and she kindly passed along the recipe. can’t wait to give these a try!
friday : pizza. i love how it instantly seems like friday when i’m making the crust for friday night dinner.
new recipe review from last week | black bean + zuchinni quesadillas
very tasty. even andy gave it a good review – which for a meatless dish, always is a compliment in the highest regard. C and i dipped ours in yogurt. super tasty and the leftovers were great for lunch as well. definitely will be making these again.
