i’m thinking of taking it easy this week re: our meals. i fell like there is a lot going on and lots that i need to do. um, hello – i still need to edit july photos and it’s almost the end of august? oops.
monday : leftovers. there are a few things remaining from the weekend that i want out of my fridge and this is the best way to do it!
tuesday : apricot basil chicken salad. this sounds so good to me right now as i’m writing our menu for the week. and really, it couldn’t be easier. if i put it together during naptime, life will be good come dinner as then it’s just assembly!
wednesday : asian barbecued turkey lettuce wraps. didn’t get these made so they’re going on this week’s menu. can’t wait!
thursday : hawaiian ribs. we didn’t get to have these last week as the grocery store didn’t have enough for teh recipe. i know. crazy. so we’re going to give it another go this week.
friday : pizza.
new recipe review from last week | sundried tomato + caper pasta
i had actually made this a couple of days before and then put it in the freezer. when dinner came around i just needed to thaw it. because of the tomatoes, i found the sauce a bit runny so i put it on to simmer for a while. all in all, a good dish and a great way to use some tomatoes. andy thinks it would be great with sausage in it. of course.

have some zucchini to use? here’s your chance to make it into dessert! this was originally a recipe for a 9×13 cake but somehow i doubt it’s a good idea to make a large cake for two adults. although i will admit i’ve done it before. much more family friendly in cupcake form. i kept a dozen for us and took the other dozen to another family that just welcomed a new baby.

probably one of the desserts i make most often. comfort food at it’s finest, my friends. if my grocery store hadn’t been out of oreo crusts last week, i likely would’ve made another.

love that these are healthier than the ones i normally make. we love muffins in general as i leave a few out for us when they’re fresh and freeze the rest for other days. muffins are the perfect toddler breakfast food. and good for a mama on the go as well! the oat topping is super yummy!
