another week that we have a lot going on, so a lighter menu of sorts. i say that every week though, don’t i. i swear i do cook and feed my family well. i just rearrange what i’m feeding them. rarely is it i’m cooking something on the same day that i’ve posted. but it serves as a guideline so i go with it!
since monday is over and i had dinner plans with a friend, it obviously isn’t included this week.
tuesday : crockpot swiss chicken casserole. i have all the stuff on hand already so i won’t be needing any ingredients before i made a store run tomorrow. everyone loves this one.
wednesday : huevos rancheros. my version anyway. i’m trying to make one meatless dinner each week – more on that later.
thursday : asian peanut butter pork. i didn’t get this made last week, so it’s on the to try list for this week.
friday : marinated grilled chicken with couscous tomato salad. a recipe from parenting magazine. not sure why all of a sudden i’m getting this magazine but happened to flip through it this weekend and found this. perhaps my neighbor signed me up?
new recipe review from last week :
quesadilla casserole. from the october issue of rachel ray’s magazine – last week’s meatless meal. although if i’m going to be truthful, it was yesterday’s lunch. super easy to put together. and while it was in the oven, i used the remaining ingredients to make the girl an awesome little quesadilla of her own, if i do say so myself. although it was fine by itself, i think i truly enjoyed it as i made a sort of salsa salad to go alongside. cherry tomatoes, cilantro, lime juice and a bit of onion – all stuff i scavenged out of this past week’s csa box. regardless, i’ll be making it again. and andy survived without having meat for a meal. although of course he mentioned it would be good with some chicken in it as well.
