for our house hunting road trip, i packed a huge stack of magazines that i haven’t had time to look through. the result? a menu plan full of new recipes from some of my favorite publications.
here’s what we’ll be eating this week :
meatless monday : out. not so much meatless, but i’ll be making up for it with our tuesday recipe. the easiest solution when i need to go grocery shopping.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : chickpea ratatouille. our meatless meal for the week from the april/may issue of vegetarian times. what appears to be the perfect mix of protein and veggies that everyone from the baby to the mama will enjoy.
wednesday : spinach pesto & sausage strata. from the april issue of rachel ray’s magazine. i love a strata that includes spinach so this one was a no brainer to tear out!
thursday : albondigas soup. we’re supposed to get snow. yes, i’m serious. so soup it is! a mexican meatball soup from the march issue of clean eating magazine – looks promising!
friday : chicken tikka masala. andy’s favorite indian dish and i found a new recipe for it in the april issue of bon appetit. it was also accompanied by a naan recipe i’d love to be brave enough to try.
new recipe reviews
shepard’s pie. from slow cooker revolution. andy’s birthday dinner pick. i’m going to give it an okay. it was more work intensive than i care for a slow cooker meal. it was good, but not sure it was that amazing for the extra work involved. would definitely make again if requested.
tunnel of fudge cake. hello yum! just one slight problem… the cake didn’t come out of the pan. no matter how hard i tried. so we had birthday cake in the man with the glaze on what should’ve been the top of the cake.
