it’s the week we get back on schedule after all the chaos of moving. here’s hoping that things begin to settle down. and that i can make a meal with the state that the kitchen is currently in!
here’s what we’ll be eating this week :
meatless monday : pancakes. in case i don’t get to the grocery store today. plus my three little carb lovers will be in heaven with breakfast for dinner with fresh fruit on the side. thinking of giving these chai spiced pancakes a whirl…
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday :lemon chicken. will this be the week i finally share this tasty recipe? i always think of photographing it AFTER we’ve cleaned our plates.
wednesday : tacos. mmmm…tacos. everyone loves them and they’re easy to throw together no matter what our schedule. i’m really wanting to find a great recipe for lentil tacos – let me know i fyou have one!
thursday : balsamic honey pulled pork sliders. these were on our menu last year for independence day and i’m demanding that they are what we’ll be dining on again this year. so very good. also a good option instead of grilling when the forecast looks soggy.
friday : slow cooker chicken puttanesca. a new recipe for us to try and one that appears to have minimal prep time. perfect!
