this week we’re preparing for house guests – our first honest to goodness, sleep in our guest room (on an air mattress) house guests! andy’s parents are arriving mid-week and we’re all excited to see them and show them our new home and neighborhood.
here’s what we’ll be eating this week :
meatless monday : lentil and brown rice tacos. so i’ve had my mind on these since the last time we had them. so good, so filling. think i’ll switch things up and make nachos with them this time around. i do have a ginormous bag of tortilla chips from costco that need to be used after all.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : pizza. not sure what time our guests are arriving so we’re going the easy route and ordering delivery. and let’s be honest, i’m sure i’ll be doing some last minute cleaning and unpacking.
wednesday : baked spasanga. i made this one other time, late last year, and it makes a LOT. perfect for when there are house guests for dinner. italian comfort food? yes!
thursday : margarita chicken. we enjoyed this the week before last but it’s so good that we’ll be having it again! paired with kristin’s cilantro lime rice, it’s perfection.
friday : turkey meat loaf. hands down my most pinned recipe. i’ll be serving it with mashed potatoes and fresh green beans. hello, weekend!

chicken caesar burgers. yum – it’s like a salad on a bun! wish i would’ve doubled the recipe to have leftovers for lunch, but that’s the only con with this recipe. definitely will be making again.
