i once again have counters in the kitchen! yesterday i made it my goal to find homes for all the odds and ends cluttering every flat surface and i think we can finally get back to real life meals around here.
here’s what we’ll be eating this week :
meatless monday : edamame + veggie fried rice. we had this for the first time a month or so ago and it was delicious. quick to throw together and even better if we can eat outside so i don’t have to pick up the inevitable mess the baby will make when eating it.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : thai chili peanut meatballs. these meatballs are always a great choice for a busy night as you simply stir the ingredients together in your slow cooker and continue about your day. not that i’m busy. i just have a mountain of boxes to unpack.
wednesday : omg chicken. giving this a second try. i made it with chicken breasts instead of cutlets the first time and they weren’t as flavorful as i had hoped. here’s hoping for a better outcome this time.
thursday : turkey meat loaf. after all the hard work that my dear husband put into the house this weekend, he deserves a meat and potatoes dinner of comfort food. this one always does the trick.
friday : oven baked chicken fajitas. hands down one of my favorites recipes i’ve found on pinterest.

slow cooker chicken puttanesca. super easy! halving some cherry tomatoes was the most difficult part of this recipe. loved putting everything together in the morning and then being able to unpack without having to stop to make dinner later in the afternoon. i have ideas of making a chicken salad out of this in the near future…
