11 days until the moving truck arrives. no big deal, right? every time i think i’ve made some headway, i wake up the next day to find yet more stuff that needs to be boxed up. i’ve only been doing this since january. ugh.
needing a no fuss menu to get us through the week.
here’s what we’ll be eating this week :
meatless monday : farmer’s market vegetable lasagna. so glad i waited to menu plan until this morning when i saw this recipe. this will be a perfect meatless dish to start our week for my little carb lovers plus it’ll mean yummy leftovers for lunch tomorrow. score!
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : leftovers. leighton will be enjoying her last date with her aunt cuckoo before we move. the other two littles will enjoy leftovers. i still have a gift card that andy and i need to use for some great italian food at a local restaurant. not sure if we’ll be able to make it happen or not.
wednesday : easiest crockpot salsa verde chicken. we all enjoyed this a couple of weeks ago and it couldn’t be more easy. i served the chicken soft taco style topped with tomatoes. yum!
thursday : homestyle chicken and noodles. i found a stray bag of noodles in the freezer this weekend when i was taking inventory of what i needed to use. love this yummy dish. it’s so different than wednesday’s dinner that nobody will notice nor care that we’re having chicken two nights in a row.
friday : out. hoping to have a date night at our hands down favorite local restaurant for the last time. steak and frites anyone? yes, please!
