i’m still running with the theme of easy meals with continued showings of our condo – including a 15 minute showing today. 15 minutes?! – and more birthdays.
here’s what we’ll be eating this week :
meatless monday : thai basil coconut lentils. a carry over from last week. with continued house showings and andy in canada for a couple of days last week, i was again going for easy. looking forward to this one!
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : easy lemon chicken. this was a pinterest find last year that we all enjoy. unfortunately, when i went to pull the link the home site is no longer available. great motivation to add it here in the coming days as it is truly as easy as the title says.
wednesday : thai chili peanut meatballs. two thai dishes in one week? sounds good to me! these are a favorite of andy’s and are beyond easy to throw together.
thursday : oven baked chicken fajitas. we haven’t had these in a month so it’s time to put them on the menu again. have i mentioned how much i love these? easiest fajitas ever.
friday : pizza. we’re celebrating more birthdays this weekend and pizza is the perfect start to the weekend.

chicken and white bean enchiladas with creamy salsa verde. after four straight weeks of having this on our menu plan, i finally was able to serve this to our family! although i almost doubled over laughing when i realized that the can of white beans that had been in the pantry was nowhere to be found. ACK! no worries, i simply replaced with black beans and went with it. the end result was good, but very similar to these white chicken enchiladas that we love.
